Roasted Broccoli Recipe With Crumb Topping

"This low sodium, low fat Roasted Broccoli Recipe With Crumb Topping recipe is so delicious, I forgot I was dieting!"



Roasted Broccoli

 Roasted Broccoli
 
 
2 lbs    broccoli  
1   shallot  
1 Tbs    olive oil  
1/2 cup    breadcrumbs  
2 Tbs    lemon zest  
2 Tbs    lemon juice  
 
1 Preheat the oven to 400*
2 Peel and mince the shallot. Set aside.
3 Wash the broccoli and cut into bite-sized flowerettes. Place in a 2 quart baking casserole dish and toss with 2 TB of the oil. Bake for 15-20 minutes until tender. Remove from the oven.
4 While the broccoli is roasting, heat the remaining 2 TB of oil in a large heavy skillet. Add the shallot and cook for one minute. Add the breadcrumbs and toast until lightly browned, about 2-3 minutes. Remove from heat and toss with the lemon zest.
5 When the broccoli is finished roasting, remove from the oven and sprinkle with the lemon juice. Top with the crumb mixture and serve.
