Salt Free Pita Bread



Salt Free Pita Bread

 Salt-Free Pita Bread
 
 
1 1/2 Tbs    dry yeast  
3 1/4 cups    bread flour  
1 Tbs    olive oil  
1 1/4 cups    water  
 
1 Place all ingredients in your bread machine and set it to run on the dough cycle.
2 When the dough is ready, Place it in a large bowl that has been sprayed with non-stick spray, cover and let rise until doubled, 1-1/2 hours.
3 On a well floured surface, knead the dough a few times. Roll it into a long roll about 12" in length. Cut it into 12 pieces, then roll each one into a tight ball.
4 Place each one back on the floured surface, and let them rest for 10 minutes, covered with a clean towel.
5 Preheat your oven to 500*
6 With a rolling pin, flatten each ball into a 6" disk. Sprinkle cookie sheet with some cornmeal and place the disks on the baking sheet. Do not let them touch, if necessary use a second baking sheet. Let them rest, covered with a clean towel, for 20-30 minutes.
7 Bake them for 2-5 minutes, until lightly browned and ballooned up. Cool on wire racks. They will deflate as they cool leaving a nice "pocket" inside for all your favorite stuffings.
