Sausage Stuffing with Apples and Sage


Sausage Stuffing

Sausage Stuffing with Apples and Herbs
1 loaf sourdough bread
1 Tbs vegetable oil
1 onion, finely chopped
3 celery ribs, finely chopped
1 lb breakfast sausage
1 cup dried apples
4 Tbs butter
1/4 cup chopped parsley
2 Tbs sage
2 cups low sodium chicken broth
salt and pepper to taste
1 Preheat your oven to 350*
2 Chop the dried apples into rough pieces.
3 Cut the crusts off the bread and discard. Cube the bread into 1/2" squares. Place the cubes on a cookie sheet and bake for 10 minutes to dry out.
4 While the bread is toasting, heat the oil in a large skillet over medium heat and sauté the onion and celery until limp. Crumble the sausage and add it to the skillet. Cook and stir to break up the chunks, for about 10 minutes, until the sausage is thoroughly cooked.
5 Combine the sausage mixture in a large bowl with the bread cubes. Add the dried apples, butter, parsley and sage. Stir to combine. Add the broth and toss to coat untie lightly moistened. Season with salt and pepper to taste.
To stuff a turkey:
1 Open the cavity of the turkey wide and spoon the dressing in. Be careful not to over stuff as it will expand during roasting. Truss closed.
To serve as a side casserole:
1 Spray a 2 qt casserole dish with non-stick spray. Spoon the dressing into the dish and bake at 350* for 30-35 minutes, until the top is golden.
