Black Sea Bass Recipe

This Delicious Sea Bass Recipe is so very simple to prepare, that you will be having fish more often.

Sea Bass can be prepared in any number of ways. This Sea Bass Recipe is quick and delicious.

Adding the sesame seeds while the fish is still broiling gives this recipe a texture all it's own.

The California Black Sea bass is slightly different from it's east coast relative. This fish is larger, and the meat is firmer.

Be certain to have your butcher slice nice, thick steaks for you, at least a half pound per serving. The flavor is wonderful, and the thicker steaks will not get overdone as easily.

Black Sea Bass Recipe

 Black Sea Bass
 
 
2 lbs    Sea bass, nice size steaks  
1/4 cup    olive oil  
2 Tbs    brown sugar  
1 tsps    sesame oil  
4 Tbs    lemon juice  
2 oz    brandy or whiskey  
1   garlic clove, crushed  
1/2 cup    sesame seeds  
 
1 Prepare a basting sauce with the oil, brown sugar, sesame oil, juice, liquor and garlic. Mix well. Brush the fish with the sauce and let them stand for 20 minutes.
2 Heat your broiler. Let it pre-heat for at least 10 minutes.
3 Cook the fish in the broiler for 4 minutes per side (less, if the steaks are thin). Baste often with the sauce. Do not overcook! When nearly done, sprinkle with the sesame seeds and continue under the broiler until the seeds are lightly toasted.
