Shepherds Pie Recipe

It is not often that a truly superb Shepherds Pie Recipe comes along that is not only easy to pull together, but has your family or dinner guests begging for the recipe.

There are more calories in this meal than we normally take in on a daily basis, but once in a while it is good to splurge.

As an option, you my substitute the heavy cream for half and half, I prefer the shepherds pie recipe as is. I will go for a walk after dinner to work off teh extra calories (smile).

There are several steps to this recipe, so read through the entire simple ground beef recipe first and see where you can be making one portion while the other is simmering, etc.

Adding both types of potatoes to the "boxti" (crepes that hold the filling) lend a wonderful taste to your finished shepherds pie recipe.

Lindsay's Favorite Irish Meal

 Lindsay's Favorite Irish Meal
 
 
Sauce  
1 cup    cream  
2 cups    chicken broth, low sodium  
3 Tbs    butter  
1   clove crushed garlic  
2 tsp    Each fresh chopped rosemary, sage and basil  
1 Tbs    cornstarch  
Filling  
1/2 lb    ground beef  
1   chopped carrot  
1/2   chopped onions  
1 cup    corn  
1 cup    cubed and cooked red potatoes  
Boxty  
1   russet potato  
1   sweet potato  
1 cup    flour  
2   eggs  
1 Tbs    Featherweight baking powder  
1/3 cup    milk  
1/2 cup    shredded cheddar cheese  
 
For the Sauce:
1 Combine all sauce ingredients, except cornstarch, into a saucepan and simmer for 30 minutes on medium heat. Mix a little of the sauce into the reserved cornstarch to make a paste, then whisk into the sauce. Cook until slightly thickened.
For the Filling:
1 Brown the meat along with the vegetables in a skillet over medium heat. Cook until the meat is nearly done, then add the sauce to the meat mixture.
2 Reduce the heat, cover and simmer gently for 15 minutes.
Boxty:
1 Cook both potatoes, then mash.
2 Sift the flour and add the potatoes, baking powder and salt. Mix well.
3 Beat eggs, then add to the flour-potatoes mixture. Add the milk and stir just until fairly mixed, like a pancake batter.
4 Pour the batter onto a large pre-heated griddle (350*). Flip half-way through cooking then top with shredded cheese.
To Assemble:
1 Fill the boxties with the meat sauce and roll up like crepes.
