Smothered Green Beans, Southern Style
Southern Smothered Green Beans | Southern Smothered Green Beans | | | | | | 6 | | bacon slices | | | 1 | | onion | | | 1 1/2 lbs | | green beans | | | 1 cup | | water | | | 1/2 tsp | | salt | | | 1/4 tsp | | pepper | | | 1 | | red bell pepper | | | 1 Tbs | | vinegar | | | 1 tsp | | sugar | | | | | | | 1 | Cut the bacon into 1" pieces. Chop the onion. Wash and trim and cut the beans into 1" pieces. Wash, seed and chop the red pepper. | | 2 | In a large skillet, cook the bacon until crisp, stirring often. Reserve on a paper towel to drain. Pour off all but 2 TB of the fat. | | 3 | Add the onion to the skillet and cook until limp. Remove to the crockpot. | | 4 | Mix the beans, salt, pepper, and onions with the water in the crockpot. Add half of the bacon. | | 5 | Cover and cook on low for 5 hours. During the last half hour of cooking, add the red pepper, vinegar and sugar. | | 6 | Drain, if necessary, and transfer the beans to a serving dish.
