Smothered Green Beans, Southern Style



Southern Smothered Green Beans

 Southern Smothered Green Beans
 
 
6   bacon slices  
1   onion  
1 1/2 lbs    green beans  
1 cup    water  
1/2 tsp    salt  
1/4 tsp    pepper  
1   red bell pepper  
1 Tbs    vinegar  
1 tsp    sugar  
 
1 Cut the bacon into 1" pieces. Chop the onion. Wash and trim and cut the beans into 1" pieces. Wash, seed and chop the red pepper.
2 In a large skillet, cook the bacon until crisp, stirring often. Reserve on a paper towel to drain. Pour off all but 2 TB of the fat.
3 Add the onion to the skillet and cook until limp. Remove to the crockpot.
4 Mix the beans, salt, pepper, and onions with the water in the crockpot. Add half of the bacon.
5 Cover and cook on low for 5 hours. During the last half hour of cooking, add the red pepper, vinegar and sugar.
6 Drain, if necessary, and transfer the beans to a serving dish. Sprinkle with the remaining bacon.
