Cut the bacon into 1" pieces. Chop the onion. Wash and trim and cut the beans into 1" pieces. Wash, seed and chop the red pepper. |

In a large skillet, cook the bacon until crisp, stirring often. Reserve on a paper towel to drain. Pour off all but 2 TB of the fat. |

Add the onion to the skillet and cook until limp. Remove to the crockpot. |

Mix the beans, salt, pepper, and onions with the water in the crockpot. Add half of the bacon. |

Cover and cook on low for 5 hours. During the last half hour of cooking, add the red pepper, vinegar and sugar. |

Drain, if necessary, and transfer the beans to a serving dish. Sprinkle with the remaining bacon. |
