Spicy, but not overwhelmingly hot. Just a nice balance of smokey cumin flavors meets add some zing cilantro here.
By marinading overnight, you have one of the very easy chicken recipes ever! And there is literally no clean up. Baked chicken in foil gets you out of the kitchen fast on on to enjoying your company and family.
To round out this meal, make additional foil packets of vegetables that can road along with the main entree.
It's OK to adjust the amount of chili powder to suit your taste. I choose to use Sodium FREE Frontier Certified Organic Chili Powder Brand of chili powder. The flavor is outstanding, and there is *zero* sodium in this brand!

skinless chicken breasts
1 Tbs
olive oil
1/4 cup
lemon juice

clove garlic, crushed
1/2 tsp
cumin
1 tsp
chili powder
1/4 cup
chopped cilantro

Mix together the oil , lemon juice, spices and garlic in a Ziploc type bag. Add the chicken breasts and marinate, refrigerated, for 1 hour.

Preheat oven to 400*.

Cut four foil squares large enough to hold a chicken breast each. Place one breast on one foil square, and top with a little of the marinade. Fold up the sides and roll down the top of the foil to seal well.

Place all the foil packages on a baking sheet and bake for 30-40 minutes. (less time for boneless breasts, more for bone-in).
