Healthy Spinach Pancakes


These spinach pancakes whip up in just a few minutes, they are utterly satisfying and should be served anytime you crave a healthy, meat-free meal.

A quick spinach recipe is always welcome, no matter who is at your dinner table, and this spinach recipe is no exception!

Additional vegetables can be added, but try not to overload the spinach pancakes or they will be too heavy. The end result should be a light, fluffy pancake, not a dense fritata or a thin crepe.

Use your zester, if you have one, to add fresh nutmeg to the pancake mix. Other seasoning you may want to experiment with here are a touch of cinnamon or garlic (but not together).
I like to add a bit of diced red pepper to the mix, the red color is very appealing and the flavor that the red pepper adds is a nice pick me up.

 Spinach and Sweet Corn Pancakes
 
 
9 oz    fresh spinach, stems removes and thouroughly washed ***OK to use frozen spinach  
3 Tbs    flour  
2   eggs  
4 Tbs    vegetable oil  
10 oz    milk  
5 oz    sweet corn, fresh or frozen  
2 Tbs    butter  
1/4 tsp    ground nutmeg  
 
1 Steam spinach. Remove from heat, drain and chop.
2 In a large bowl, mix the flour, egg and oil. Beat well. Stir in the milk. Add the corn, spinach and the nutmeg. Let rest in a cool place for 1 hour before using batter.
3 In a non stick skillet, heat the butter over medium heat. Spoon the batter into the pan and let spread to 3" circles. Cook 3 minutes per side, until golden brown. Repeat with the remaining batter.
