Spinach and Artichoke Casserole
This has been our most requested recipe to date. Spinach and artichokes are a welcome combination. And this recipe is easy to fix, using frozen vegetables, and quick to put together ... Enjoy!
Spinach and Artichoke Casserole | Spinach and Artichoke Casserole | | | | | | 1 package | | frozen artichoke hearts | | | 3 packages | | frozen chopped spinach | | | 8 oz | | cream cheese | | | 2 tbs | | mayonnaise | | | 4 tbs | | olive oil | | | 6 tbs | | milk | | | 1/2 tsp | | ground black pepper | | | 1/2 cup | | grated parmesan cheese | | | | | | | 1 | Pre-heat oven to 375* | | 2 | Squeeze as much moisture as possible from the spinach by rolling in a clean dish towel. Cut artichoke hearts into bite-sizes. | | 3 | Blend together the cream cheese, oil, mayonnaise. lowly add the milk. | | 4 | Spray a glass (8x8) casserole dish with non-stick spray. Layer the artichokes, spinach then the cream cheese mixture in the dish. Sprinkle with the pepper. Top with cheese. | | 5 | Bake for 40 minutes, until nicely browned. | | 6 | You can assemble this dish ahead of cooking time, and refrigerate.
