Spinach and Artichoke Casserole


This has been our most requested recipe to date. Spinach and artichokes are a welcome combination. And this recipe is easy to fix, using frozen vegetables, and quick to put together ... Enjoy! Spinach and Artichoke Casserole

 Spinach and Artichoke Casserole
 
 
1 package    frozen artichoke hearts  
3 packages    frozen chopped spinach  
8 oz    cream cheese  
2 tbs    mayonnaise  
4 tbs    olive oil  
6 tbs    milk  
1/2 tsp    ground black pepper  
1/2 cup    grated parmesan cheese  
 
1 Pre-heat oven to 375*
2 Squeeze as much moisture as possible from the spinach by rolling in a clean dish towel. Cut artichoke hearts into bite-sizes.
3 Blend together the cream cheese, oil, mayonnaise. lowly add the milk.
4 Spray a glass (8x8) casserole dish with non-stick spray. Layer the artichokes, spinach then the cream cheese mixture in the dish. Sprinkle with the pepper. Top with cheese.
5 Bake for 40 minutes, until nicely browned.
6 You can assemble this dish ahead of cooking time, and refrigerate. Allow extra cooking time if you do.
