Spinach Salad Recipe

spinach shiitake salad recipe | Spinach and Shiitake Mushroom Salad | | | | | | Dressing | | | 3 Tbs | | olive oil | | | 1 | | red onion, sliced | | | 2 | | cloves garlic, minced | | | 6 Tbs | | water | | | 2 Tbs | | balsamic vinegar | | | For the Salad | | | 6 oz | | shiitake mushrooms, sliced | | | 1 | | leek, sliced | | | 2 tbs | | chopped fresh thyme | | | 1 lb | | fresh baby spinach, washed and patted dry | | | | | | | 1 | Heat the oil over medium heat in a non stick skillet. Add the onion and saute until limp. Add the minced garlic and saute an additional 2 minutes. Do not let brown. | | 2 | Add 3 TB water and vinegar, and stir over low heat for 1 minute. Remove from skillet and reserve. | | 3 | Combine mushrooms, leek, thyme 3 TB water, TB oil in the skillet and saute over medium heat until mushrooms and leek are tender, adding additional water by the Tablespoon if it all dries out. Cook 8 minutes. | | 4 | Place spinach in a large bowl. Add the warm onion mixture and toss.
