Spinach Salad Recipe

spinach shiitake salad recipe

 Spinach and Shiitake Mushroom Salad
 
 
Dressing  
3 Tbs    olive oil  
1   red onion, sliced  
2   cloves garlic, minced  
6 Tbs    water  
2 Tbs    balsamic vinegar  
For the Salad  
6 oz    shiitake mushrooms, sliced  
1   leek, sliced  
2 tbs    chopped fresh thyme  
1 lb    fresh baby spinach, washed and patted dry  
 
1 Heat the oil over medium heat in a non stick skillet. Add the onion and saute until limp. Add the minced garlic and saute an additional 2 minutes. Do not let brown.
2 Add 3 TB water and vinegar, and stir over low heat for 1 minute. Remove from skillet and reserve.
3 Combine mushrooms, leek, thyme 3 TB water, TB oil in the skillet and saute over medium heat until mushrooms and leek are tender, adding additional water by the Tablespoon if it all dries out. Cook 8 minutes.
4 Place spinach in a large bowl. Add the warm onion mixture and toss. Top with the mushroom mixture and serve.
