Grilled Steak Sandwich with Grilled Peppers

"HINT: For more sodium savings, serve this steak sandwich on a bed of rice, without the bun."

Easy recipes like this help keep the clean up to a bare minimum.

If you do not have access to a BBQ, it's easy to use your broiler in place of the grill for the same taste.

Using a lean cut of beef will cut down on calories, too!

The mixed herbs add a flavor like no steak house can match! Your guests will wonder what your secret sauce is! Grilled Sandwiches with Peppers

Grilled Steak Sandwiches with Peppers
24 oz rib eye steaks
4 sandwich baguettes
1 cup parsley
1 cup cilantro
2 tbs balsamic vinegar
1/4 cup oregano
2 cloves garlic
2/3 cup olive oil, plus a few tablespoons extra for peppers
2 red bell peppers
1 Preheat your grill to medium high.
2 Combine the parsley, cilantro, vinegar, oregano, garlic in your food processor or blender until finely chopped. Add the oil and puree until smooth.
3 Wash, core and seed the peppers. Cut into long strips. Brush lightly with olive oil.
4 Grill the peppers until tender, about five minutes, turning over halfway through cooking time. Grill the steaks until desired doneness, about four minutes per side for medium rare. Grill the bread until lightly toasted.
5 Slice the steaks thinly crosswise. Divide evenly among the bread bottoms. Spoon the herb mixture over the steaks and top with grilled pepper strips. Top with the bread tops.
