Scalloped Sweet Potatoes

 Scalloped, delicious, Sweet Potatoes
 
 
1 9"    ready-made graham cracker crust  
2 cups    sweet potatoes, peeled and thinly sliced  
1   naval orange, peeled and chopped into small bites  
1 Tbs    brown sugar  
1/3 cup    fresh orange juice  
1/2 tsp    pumpkin pie spice  
1/4 tsp    cinnamon  
1/4 tsp    nutmeg  
2 Tbs    maple syrup  
1 Tbs    melted, unsalted butter  
 
1 Preheat you oven to 425*
2 Cover the bottom the the pie crust with an even layer of the potatoes. Top with a layer of the oranges. Repeat layers, ending with potatoes.
3 In a small bowl, stir sugar into the orange juice. Pour this over the "pie" and sprinkle with the spices.
4 Bake one hour, covered. Uncover and drizzle the maple syrup and the butter. Bake an additional fifteen minutes, or until nicely browned.
