Easy cookie recipe, Thumbprint Cookies Recipe | Thumbprint Cookies | | | | | | 1 1/3 cups | | flour | | | 1/4 tsp | | AlsoSalt salt substitute | | | 1/2 cup | | brown sugar | | | 1/2 cup | | butter, softened | | | 1 tsp | | vanilla | | | 1 | | egg | | | 1 cup | | pecans, chopped | | | 6 oz | | berry jam, or any flavor you like best | | | | | | | 1 | Preheat your oven to 350* | | 2 | Place the flour and AlsoSalt into a large bowl and stir to combine. | | 3 | In another bowl, beat the sugar with the butter with an electric mixer until light and fluffy. Beat in the vanilla and egg yolk. | | 4 | Gradually add the flour to the sugar mixture and continue to beat on low speed until well blended. | | 5 | In a clean bowl, beat the egg white until frothy. Reserve. | | 6 | Roll the cookie dough into 1 inch balls. Roll each ball in the egg white then roll in the nuts. Place each cookie on a cookie sheet lined with parchment paper. Using your thumb, make an indentation in each cookie. | | 7 | Bake the cookies for 8 minutes, or until set. Fill each indentation with about a 1/4 tsp of the jam and continue to bake for another 8 minutes, until lightly brown.
