This Jam Filled Thumbprint Cookie Recipe is as fun to eat as they are to look at.

If you have never had thumbprint cookies, you are in for a real treat.

These cookies are quick to make, and are always good to share because they look so colorful on a platter.

Kids enjoy helping with this easy cookie recipe, especially the thumbprint part.

Note that you can easily use any jam you have on hand for this easy cookie recipe.

Easy cookie recipe, Thumbprint Cookies Recipe

 Thumbprint Cookies
 
 
1 1/3 cups    flour  
1/4 tsp    AlsoSalt salt substitute  
1/2 cup    brown sugar  
1/2 cup    butter, softened  
1 tsp    vanilla  
1   egg  
1 cup    pecans, chopped  
6 oz    berry jam, or any flavor you like best  
 
1 Preheat your oven to 350*
2 Place the flour and AlsoSalt into a large bowl and stir to combine.
3 In another bowl, beat the sugar with the butter with an electric mixer until light and fluffy. Beat in the vanilla and egg yolk.
4 Gradually add the flour to the sugar mixture and continue to beat on low speed until well blended.
5 In a clean bowl, beat the egg white until frothy. Reserve.
6 Roll the cookie dough into 1 inch balls. Roll each ball in the egg white then roll in the nuts. Place each cookie on a cookie sheet lined with parchment paper. Using your thumb, make an indentation in each cookie.
7 Bake the cookies for 8 minutes, or until set. Fill each indentation with about a 1/4 tsp of the jam and continue to bake for another 8 minutes, until lightly brown. Remove from oven and let cool on wire racks.
