Jam Filled Thumbprint Cookies

 Jam filled Thumbprint Cookies

1 1/3 cups    flour  
1/4 tsp    also salt brand salt substitute  
1/2 cup    brown sugar  
1/2 cup    butter, softened  
1 tsp    vanilla  
1   egg, separated  
1 cup    pecans, chopped  
6 oz    berry jam ( your favorite flavor)  
 
1 Preheat teh oven to 350*
2 Place the flour and also salt into a large bowl and stir to combine.
3 In another bowl, beat the sugar with the butter with an electric mixer until light and fluffy. Beat in the vanilla and egg yolk.
4 Gradually add the flour to the sugar mixture and continue to beat on low speed until well blended.
5 In a clean bowl, beat the egg white until frothy. Reserve.
6 Roll the cookie dough into 1 inch balls. Roll each ball in the egg white then roll in the nuts. Place each cookie on a cookie sheet lined with parchment paper. Using your thumb, make an indentation in each cookie.
7 Bake the cookies for 8 minutes, or until set. Fill each indentation with about a 1/4 tsp of the jam and continue to bake for another 8 minutes, until lightly brown. Remove from oven and let cool on wire racks.
