Tomato and Zucchini Caviar | Zucchini and Tomato Appetizer | | | | | | 2 lbs | | tomatoes | | | 4 Tbs | | olive oil | | | 2 cups | | zucchini, grated | | | 1/2 cup | | chopped red bell peppers | | | 1/4 cup | | chopped onions | | | 1/4 cup | | minced fresh parsley | | | 2 | | garlic cloves, minced | | | 2 Tbs | | minced fresh herbs (basil, oregano, marjoram, any) | | | 1 tsp | | Worcestershire sauce | | | 1 tsp | | lemon zest | | | 1 Tbs | | lemon juice | | | 1 lb | | wheat crackers | | | | | | | 1 | Bring a large pot of water to a boil. Add the tomatoes and blanch for just under one minute. Remove with a slotted spoon. | | 2 | Peel then chop the tomatoes.
