Tomato Appetizer Spread Wth Veggies

You will want to process this tomato appetizer recipe a bit longer (by a few seconds) in your food processor to get the right consistency for making a sandwich spread.

I find that it's really "kid friendly" too, kids of all ages just love this cold appetizer recipe! It must be the enticing colors that the various vegetable add to this tomato appetizer recipe.

Feel free to change up the vegetables, except of course the tomatoes, (you need them for their moisture) to what ever you find you have already.

Tomato Appetizer Recipe with Zucchini

Zucchini and Tomato Appetizer

2 lbs tomatoes
4 Tbs olive oil
2 cups zucchini, grated
1/2 cup chopped red bell peppers
1/4 cup chopped onions
1/4 cup minced fresh parsley
2 garlic cloves, minced
2 Tbs minced fresh herbs (basil, oregano, marjoram, any)
1 tsp Worcestershire sauce
1 tsp lemon zest
1 Tbs lemon juice
1 Bring a large pot of water to a boil. Add the tomatoes and blanch for just under one minute. Remove them with a slotted spoon.
2 Peel then chop the tomatoes. Reserve the tomatoes in a large bowl.
3 Heat the oil in a large skillet over medium-high heat. Add the zucchini, pepper and onion. Sauté all for 5 minutes. Drain off any excess liquid. Add the parsley and the chopped herbs.

Stir in the Worcestershire sauce, lemon juice and zest.

4 Mix with the chopped tomatoes. Refrigerate this tomato appetizer recipe overnight to blend the flavors.
5 Serve this delicious tomato appetizer with the crackers as an elegant spread.
