Fresh Tomato Sauce

"Grandma Francesca would make this EASY Fresh Tomato Sauce probably twice a week when I was growing up.This is the real deal."


Fresh No Salt Pasta Sauce

 Exquisite Tomato Sauce
 
 
This is an excellent, traditional fresh pasta sauce. And no added salt!
 
3 lbs    roma tomatoes  
1   chopped onion  
2 cloves    garlic, crushed  
1   bay leaf  
2 Tbs    fresh basil  
2 Tbs    fresh oregano  
2 Tbs    fresh parsley  
2 tbs    balsamic vinegar  
1/2 tsp    pepper  
Optional    salt, if desired, to taste. (this is perfect WITHOUT any added salt.)  
4 tbs    unsalted butter  
 
1 Wash and cut up tomatoes. Peel, if desired. (see tips)
2 Mince the fresh basil, oregano and parsley together and reserve.
3 In a large saucepan, over medium heat, cook the tomatoes for 10 minutes. Stir and crush them as they cook. Add the garlic, onion and the bay leaf. Continue to cook for 10 minutes more, until the tomatoes begin to thicken.
4 Add the herbs, vinegar and butter. Simmer for 20 minutes over low heat.
5 Remove the bay leaf before serving.
 
Servings: 6
Yield: 2 cups

 Cooking Tips
To easily peel tomatoes dip them, one at a time, into boiling water for a few seconds. The skins should now easily come off. Unpeeled tomatoes give a richer taste to the sauce. Peeling the tomatoes lends a different taste that some prefer.
Experiment! Add sliced fresh mushrooms or diced red peppers for a change up.
