Stuffed Trout Recipe

Unbelievable EASY Stuffed Trout Recipe is so flavorful you will wonder why you haven't made this until now.

Allow at least one small trout per adult serving.

Using lemon zest is crucial for the same flavor results. A microplane works wonders here.

Have your butcher clean and bone the fish for you, as this can be messy. Splitting it is an easy step.

Be certain that your oven is up to temperature before you place the stuffed trout in the oven.

1 Tbs    olive oil  
2 Tbs    sage  
3 cups    onions, thinly sliced  
1   lemon  
1.5 lbs    trout, cleaned, boned and split in half, lengthwise from head to tail.  
1/4 tsp    pepper  
 
1 Preheat oven to *500.
2 Zest the lemon, and reserve. Juice the lemon to make 1/4 cup juice and reserve.
3 In a large skillet, saute the onions in the oil until translucent. Add the sage and remove from heat.
4 Place half of the fish in a large, glass baking dish and sprinkle with the ground pepper. Top with half of the zest and half of the sauteed onions. Top with the rest of the fish and then the remaining zest and onions. pour the juice over the fish and cover tightly with foil.
5 Bake for 3 minutes, then TURN OFF the oven. Do not open the oven door for 20 minutes. The fish will be moist and delicious, ready to serve.
