Vegetarian Chili Recipe


If you are searching for an easy, healthy meat-free chili recipe that pulls together very quickly, this is it.

Sometimes I put everything in the crockpot before retiring for the night, and in the morning, after all the ingredients have had a chance to blend together, I turn on the slow cooker and let the meal begin to cook.

It is so very satisfying to have a healthy vegetarian meal ready and waiting when we are ready to eat.


Three Bean Crockpot Chili Recipe

Vegetarian chili
1/2 cup each black beans, kidney beans and pinto beans
1-2 diced onions
2-3 cloves garlic
1 can tomato paste
1 can no salt added diced tomatoes
2 tbs balsamic vinegar
1/4 cup brown sugar
2 tbs no salt added chili powder
1 tbs cumin seed
1 tsp oregano
1 tbs Hungarian paprika

1 Add all ingredients to crockpot, and set on HIGH for 4-5 hours.
2 Serve in individual sourdough bread bowls, if desired. Or top a baked potato with this well spiced entree.
