Fun to Make Veggie Pinwheel Sandwiches

Colorful Pinwheel Veggie Sandwiches

"Your guests won't guess how EASY these Veggie Rolls are to make, they makes such an elegant presentation!"



The sodium content is a bit higher than I would like to see, but that is due almost completely to the flour tortillas used in this vegetarian recipe.

A good substitution for the tortillas would be to roll out sliced homemade bread with a pastry roller.

These pinwheel sandwiches look so pretty on a plate! And they travel well, if you need to pack a picnic.



Vegetarian Rolls

These no-cook sandwich spirals offer a colorful presentation. If you use flavored tortillas (spinach, tomato, etc.) you get double the eyecandy!
 
4   flour tortillas  
8 oz    soft cream cheese  
1 cup    avocado  
1 cup    diced tomatoes  
1/2 cup    minced mushrooms  
1/2 cup    grated carrots  
1/4 cup    grated cabbage  
 
Choose burrito-sized tortillas for this no-cook sandwich. Especially fun to use are the vegetable flavored tortillas. Try spinach or tomato!
1 Divide the softened cream cheese into four portions and spread one portion evenly one each tortilla. Repeat with the avocado.
2 Sprinkle each tortilla with a portion of the grated carrots, diced tomatoes and minced mushrooms and the grated cabbage.
3 Fold one edge of a tortilla over 1/4 of the way across and press down slightly. From this folded edge, tightly roll up the tortilla into a tight long roll. Repeat with the other tortillas.
4 Slice each roll horizontally into 6 even sections, and serve on an attractive plate.
