Vodka Pasta Recipe

"My family LOVED this Vodka Pasta Recipe! It was on the table in under 15 minutes, too."



Any type of pasta will work nicely in this recipe. I prefer to use either bow-tie shaped or fusilli pasta because these pastas hold the sauce better than spaghetti pasta.

The sodium is a bit high due to the prosciutto, which is easily substituted for any other cooked meat.

You can omit the prosciutto altogether, although the slightly salty taste it lends is key to the true flavor of this Italian cooking recipe.



Pasta with Vodka Sauce

 Vodka Pasta
 
 
2 Tbs    olive oil  
2 cloves    garlic  
1/2 cup    white wine  
1 cup    heavy whipping cream  
1/4 cup    parmesan cheese  
1/4 cup    prosciutto  
1 lb    pasta  
1/2 cup    vodka  
1/8 cup    parsley  
1/4 tsp    freshly ground black pepper  
 
1 Thinly slice the garlic. Thinly slice the prosciutto, reserve. Add the oil to a medium sized saute pan and heat over medium heat. Add the garlic and saute for 1 minute. Add the wine and cook for 2 more minutes. Add the cream and simmer for two more minutes. Stir in the cheese and the prosciutto. Remove from the heat.
2 Cook the pasta as package directs. Drain, and place in serving bowl.
3 Bring the sauce to a simmer and add the vodka, simmering for 30 seconds to burn off the alcohol.
4 Chop the parsley fine.
5 Pour the sauce over the pasta and toss. Sprinkle with the pepper and parsley and serve.
