Wild Rice with Orange Zest Recipe

"It's easy to make this delicious wild rice side dish for everyday or company with just 2 ingredients on hand"



Take a simple side dish of rice from faded to fabulous with just a dash of orange zest.

I like to pair this simple vegetarian recipe with the either the broccoli casserole or else the spinach and artichoke casserole. Both work well to keep your meal balanced.

Everyone thinks it tastes so exotic, but to tell the truth, this healthy side dish is so quick and easy to make.

Since wild rice takes a bit longer to steam than other rices, you can have a casserole going in the oven and they will be done at the same time.
I have often used my rice cooker for this recipe, and in no time the scent of sweet orange rice recipe fills the kitchen and brings them to the table ... fast!

Wild Orange Rice Recipe

Wild Orange Rice Recipe
3/4 cup wild rice
2 cups unsalted vegetable broth
2 Tbs orange zest
1 tsp thyme
1/2 cup chopped almonds
1 In a medium saucepan, combine rice, vegetable broth, zest and thyme. Heat over medium heat just until it boils.
2 Reduce heat to low, and cook, covered, for about 55 minutes. Check to see that the rice is done, if not, continue to cook until the rice is tender. Do not let it boil dry, adding a bit more water if necessary.
3 When your orange rice dish is done, stir in the almonds and then serve.
