Baked Gratin With Yams and Green Apples
"The SECRET of this simple yams dish is the maple syrup"
Yam and Apple Gratin | Yam and Green Apple Gratin | | | | | | 5 Tbs | | butter | | | 3 Tbs | | flour | | | 3/4 cup | | maple syrup | | | pinch | | salt(optional) | | | 1/4 cup | | brown sugar | | | 3 lbs | | yams | | | 1 1/2 lbs | | green apples | | | | | | | 1 | Preheat your oven to 350* Spray a 9x13 baking dish with non-stick spray. Set aside. | | 2 | Peel the yams and cut into 1/4" thick slices. Reserve. Peel and core the apples, then slice them into thin slices. Reserve. | | 3 | In a small saucepan, heat the butter until just melted. Whisk in the flour and cook for one minute, stirring constantly. Do not let brown. Add the maple syrup, salt (if using) and brown sugar. Simmer, whisking frequently, for 4 minutes. Remove from the heat and reserve. | | 4 | Arrange the yam slices and the apple slices in the baking dish, alternating "rows" of each to fill the pan. Pour the reserved sauce over the slices. Cover with foil and bake for 40 minutes. | | 5 | Uncover and raise the oven temperature to 450*.
