Zucchini in Zucchini Sauce
"Your guests won't guess how EASY this Zucchini in Zucchini Sauce was to make!"
Squash Recipe | Zucchini in Zucchini Sauce | | | | | | 5 | | zucchinis, or any summer type squash | | | 4 Tbs | | unsalted butter | | | 1/2 cup | | cream | | | 1/8 tsp | | ground pepper | | | 1/4 tsp | | ground nutmeg | | | | | | | 1 | Cut the zucchini crosswise into 1 1/2" slices. Quarter each slice, then trim each slice into a rough oval slice, saving the trimmings. You should have about 4 cups of trimmings. | | 2 | Melt the unsalted butter in a medium saucepan over low heat. Add the squash trimmings, cover, and cook, stirring occasionally. Cook until tender, about 9 minutes. | | 3 | Transfer the trimmings into a food processor with the metal blade in place. Process until smooth. Add the cream and spices, process 10 seconds. | | 4 | Bring about 4 cups of water to a boil and cook the zucchini slices about 6 minutes, until tender. Drain. | | 5 | Place the slices in a serving bowl and top with the zucchini sauce.
