Zucchini Salad


This zucchini salad is perfect for when you need your meals in under 30 minutes! Other squashes will work equally as well in this vegetarian salad recipe.

Actually a raw vegetarian salad, this zucchini salad is full of flavor, thanks to the added red pepper and red onion.

Healthy Zucchini Salad recipe. One of the raw vegetarian salads. In under 10 minutes this easy salad can be on the table!

The simple dressing is wonderful over other salads as well.

I usually make a double portion of the dressing, because it keeps well in the refrigerator for a couple weeks.

You will feel great when you eat more Vegetarian Salads like this one. It makes an easy side salad and a terrific main course salad, too.

Zucchini and Red Onion Salad
3 Tbs balsamic vinegar
1 1/2 Tbs sugar
2 tsp soy sauce
2 garlic cloves, minced
1/4 cup fresh orange juice
2 zucchini
1 red bell pepper, chopped
1/2 cup sliced red onions
1/4 cup sliced almonds
4 Tbs sesame seeds
1 Whisk together the vinegar, soy sauce, sugar, garlic and orange juice.
2 Thinly slice the zucchinis. Place them in a serving bowl along with the sliced red onion and chopped red pepper.
3 Pour the dressing over and toss well to coat. Top with the almonds and sesame seeds.
Servings: 6
