Zucchini Salad
This zucchini salad is perfect for when you need your meals in under 30 minutes! Other squashes will work equally as well in this vegetarian salad recipe.
| Actually a raw vegetarian salad, this zucchini salad is full of flavor, thanks to the added red pepper and red onion.
In under 10 minutes this easy salad can be on the table!
The simple dressing is wonderful over other salads as well.

I usually make a double portion of the dressing, because it keeps well in the refrigerator for a couple weeks.
You will feel great when you eat more Vegetarian Salads like this one. It makes an easy side salad and a terrific main course salad, too.
